This week Rachel of Sweet Tarte chose Crunchy and Custardy Peach Tart. Not only do I love tarts, but I learned something really handy making this tart: how to easily skin a peach. When I imagined making this tart, I assumed that I would simply cut off the skin with a knife, but Dorie instructs a different and very easy way to get the skin off. After halving and pitting the peach, submerse or blanche the peach in boiling water for ten seconds. Next, briefly put the peach in ice cold water, and viola! the skin easily peels off. Make sure to do this one peach at a time because if you leave the peach in the cold water too long it won't work.
